Once kneaded into loaves, they are baked, then sliced, and baked once more.They can be consumed as they are or they can accompany all other meals.
In Lesvos the most known and most favourite rusks of the consumers are our own, the so called “agiasotika”.
The barley is produced and ground in Lisvori, Lesvos.
It is a whole grain rusk that comes in two shapes, simple cut by hand and round its traditional shape (dakos).
It is considered very healthy since it contains the whole chaff of the grain.
It is mainly used in salads and soups in Greece.
