When the Catholic missionaries came to PNG, Central Province they brought with them coffee seeds and avocados as well. And although coffee was first grown in this part of the country it was the highlanders that actually participated in commercial activities of coffee. To this current date Third & fourth generation
Farmers have been trained to pick fully ripe cherries and pulp them the same day. Then they ferment in bags for 36-48 hrs. Rinse in fresh clean water and soak for another 24 hrs before drying on raised beds.
