Taggiasca Olive Paste in Extra Virgin Olive Oil 18%

The Taggiasca olive is an olive cultivar typical of Western Liguria, specifically of the province of Imperia. Initially it was used almost entirely for the production of oil and was transformed into brine only for family consumption. Thanks to its high oil content which makes it particularly sweet and its very thin skin, in the last twenty years it has become one of the most sought after varieties for consumption in brine.

After being pitted, the Taggiasca olives in brine are crushed until a smooth cream is obtained with the addition of extra virgin olive oil. 

Ideal on canapés as an aperitif or as a condiment for pasta.
