The main product of the Ligurian Riviera is the Genovese basil (from Genoa, Italy).
The basic ingredient for the production of our Genovese pesto has, since ancient times, been Genovese basil assembled with other ingredients such as extra virgin olive oil, garlic, pine nuts and cheese. This mixture was "pounded" in a marble mortar until it became a homogeneous "cream": hence the name PESTO.
