Black Chilli Paste or in Malaysia we called it as 'Sambal Hitam Pahang', is a Ready-To-Eat spicy, dark chili paste from Pahang, Malaysia. It's made by cooking dried chilies, shrimp paste, shallots, garlic, and tamarind together. The result is a rich, smoky, and slightly sweet sambal that's used as a topping or dip for rice, meats, and other dishes. The "hitam" (meaning "black") comes from the deep color of the paste. It lasts for 2 years before opening. Once opened, it remains fresh for up to 3 months in the refrigerator. This product is oil-free.
