The fishermen use a “gozzo”, traditional Italian boat with a lamplight at the bow to attract them during the night. Once caught, the sardines are then carefully selected by hand, cleaned with care and steamed for about an hour to keep its organoleptic properties to the full, before been placed in a tin with olive oil. Very delicate taste and flavoursome
