ANCHOVIES IN OLIVE OIL ^Sale

Exquisite and delicate, they are very sought after by anchovy enthusiasts, who recognise that they are completely different to the cheaper versions now found in most supermarkets. These flavoursome fish are individually chosen according to very stringent criteria, from a fishing village in Sicily.

They are then meticulously cleaned and filleted and then jarred by hand – to preserve their flesh – in olive oil. A lot of effort is put into finding the right balance of salt for every batch produced and a lot of pride taken to ensure that the final product is perfect.
